Beer aged in oak bourbon barrels – The captivating taste evolution is due to two important factors. The oak barrel, charred on the inside, delivers smoky and vanilla flavours. The wood is infused with the original bourbon, which delivers sensational flavour development with caramel notes. – 6 months barrel aged – Barrel material American oak. Four Roses and Buffalo Trace barrels.
Huge, dense, light-yellow head, resistant, over bright orange-caramel coloured beer. Bourbon, alcohol, intense vanilla, cedarwood; sweet nose, enhanced by the alcohol. Sharpish caramel flavour, with lots of vanilla especially retronasal, cypress, ripe pears. Classical Duvel-flavour in the background, pretty dry still. Backthroat serious alcoholheat; good carbonation, certainly seen the barrel aging. Very slick to oily MF, at least medium bodied.

Chimay “Grande Réserve” Barrel Aged – Cognac 2016

 
On the eye, the beer boasts a deep brown robe with a bright glint. Its extremely fine and smooth foam also possesses a slight shade of cream. On the nose, notes of black tea, jasmine and wood are equally predominant. On the palate, the woodiness cloaks the bread crust, roasting, mocha and Cognac aromas as well as the empyreumatical notes. This edition boasts an excellent blend of the characters of Chimay Bleue and Cognac. For this second batch, a mixture of barrels has been used. 38% of French oak – second utilization 22% of American oak – second utilization 22% of new cognac barrels 18% of new chestnut.

Chimay “Grande Réserve” Barrel Aged – Rum 2017

Chimay is presenting its new edition of the “Grande Réserve” barrel aged. An exceptional beer which has benefited from a triple fermentation and a prolonged maturation in oak rum barrels. Unpasteurized and unfiltered, this beer offers an inimitable round and woody flavor. (10,5%)
This vintage beer has a woody aroma with a few mild notes of vanilla. It also reveals ester aromas (banana, pear, apricot).
To the palate, it is a rounded, creamy beer. Amongst its sweet and roasted accents, it shows perfect balance, despite a higher alcohol content than its predecessor. Its refined sparkling properties add the finishing touch to the unique character of an exceptional product.
64% of the oak-barrels are sourced from France and 36% from America. This batch n°1 is 10% alc. vol.

St Bernardus Abt matured for 6 months in Oak Calvados barrels.
It pours deep brown with a thick beige head. Nose is light weird herbs, brown sugar, sweet, light soap, brown banana… Taste: sweet malt, brown sugar, dried fruit, yeast, oak, caramel, cherry and cognac. Body: Full body with a great, crisp, carbonation. A very very nice brew.

A DREAM!!!

Vleteren Bruin 12° Oak Barrel Aged pours a very dark brown coloured beer, with a light beige head on top, almost two fingers in size, thick enough, with average retention and light lacing left on the glass. Aroma is dried fruit, honeyed caramel, light grape and port notes, vanilla, dark rum soaked bread, drier barrel elements. Taste is caramel and fruity port, dark toffee, yeast and honey, spicy bitterness, finishing with light chocolate and brown sugar. Smooth, medium heavy body. Pretty nice.

A traditional beer made with modern techniques. Bottle fermentation and dry hopped beer. Bottle-fermented and dry-hopped, Monsieur Rock is a bottom-fermented beer brewed using traditional methods by Jean-Marie Rock, a master brewer with almost 40 years’ experience. Monsieur Rock is a blond beer with a 6.6% alcohol content. It is brewed using just 4 ingredients: Pilsner malt, aromatic hops, water, and a specially selected bottom-fermenting yeast. This very low-temperature, bottom-fermented beer is produced using the same methods as were used to make certain special beers more than 40 years ago, making it a traditional beer brewed using modern techniques. The fermenting period lasts for over a week, and the beer matures in the maturation tank at a low temperature in the presence of aromatic hops. A specific yeast strain is used for bottle fermentation.

Petrus Aged Pale is honeyed lemon. Thick and sticky white foam. Attractive aroma of lemon rind, brett, and rose petals. Deeper swirls brings out sweetish malts and rich toasted oak. Soft but creamy carbonation. Iron comes and goes, with continual acidity and a restrained brett flare. Finishes slightly moist and sweet with a gorgeously harmonic culmination of oak and toasted malt hulls. Absolutely amazing.
